I love so many things about the changing of a season. From the change in attitude, to the change in climate, to the change in clothing, each change in season brings with it renewal–like hitting the reset button. I especially love the new varieties of fruits and vegetables available each season. For summer, I was a major berry fan–blackberries, blueberries, strawberries, more please. As we ring in all things Fall lately, pears have become a staple in this house. Every day.
With that being said, I wanted to share with you a few quick and healthy meals we eat on a daily basis with this seasonal fruit.
As a snack or breakfast, both Preston and I have been loving this pear parfait.
PEAR PARFAIT
3/4 cup Fage’ 0% Greek Yogurt
2 heaping TBSP 0% Cottage Cheese
2 TBSP granola
1/2 – 1 Pear chopped in cubes
Local Honey (drizzled on top)
I also have been loving this pear and pumpkin goat cheese salad for lunch. I usually use the other half of the pair I ate for my snack earlier that day. (:
PEAR & PUMKIN GOAT CHEESE SALAD
2 Handfuls Organic Baby Spinach
1/2 Pear sliced thinly
1/3 Avocado
1 tsp Pumpkin Goat Cheese (crumbled)
1 tsp sliced almonds
Local Honey (drizzled on top)
1 tsp olive oil
salt, pepper, and garlic powder for taste
